- 2 ripe bananas

1 ½ cups rolled oats

½ cup all-purpose flour (or oat flour)

1 egg (or flax egg)

½ tsp baking soda

1 tsp vanilla extract

½ tsp cinnamon

Optional: ½ cup chocolate chips, ¼ cup nuts, ¼ cup raisins
Instructions

Preheat oven to 350°F and line a baking sheet.

Mash bananas in a bowl. Add egg and vanilla; mix well.

Stir in oats, flour, baking soda, cinnamon, and salt.

Fold in any optional mix-ins.

Scoop dough onto sheet, flatten slightly.

Bake for 12–14 minutes or until golden.

Cool before serving.
