Ingredients
- 1 kg chicken wings
- 2 tbsp aluminum-free baking powder
- ½ tsp salt
- ½ tsp pepper
- 150 ml Frank’s hot sauce
- 120 g unsalted butter
- 1 tbsp cider vinegar
- 1 tsp Worcestershire sauce
- 2 cloves garlic (peeled and minced)
- 1 tbsp honey
- ¼ tsp salt
- 120 g sour cream
- 3 tbsp mayo
- 75 g soft blue cheese
- ½ tbsp cider vinegar
- ½ tsp Worcestershire sauce
- pinch dried parsley
- 2 medium carrots (peeled and cut into 2-inch pieces)
- 2 sticks celery (cut into 2-inch pieces)
Instructions
- Preheat the oven to 120C/250F and set an oven-safe rack on a baking tray.
- Cut each chicken wing at the joint and dry thoroughly using paper towels. Toss with baking powder, salt, and pepper in a large bowl.
- Arrange wings skin side up on the rack and bake for 30 minutes on the lower shelf.
- Increase temperature to 220C/425F and bake for an additional 45-50 minutes until golden brown and crispy.
- Meanwhile, prepare the Buffalo sauce by combining hot sauce, butter, vinegar, Worcestershire sauce, garlic, honey, and salt in a saucepan over medium heat.
