  • 2 tbsp aluminum-free baking powder
  • ½ tsp salt
  • ½ tsp pepper
  • 150 ml Frank’s hot sauce
  • 120 g unsalted butter
  • 1 tbsp cider vinegar
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic (peeled and minced)
  • 1 tbsp honey
  • ¼ tsp salt
  • 120 g sour cream
  • 3 tbsp mayo
  • 75 g soft blue cheese
  • ½ tbsp cider vinegar
  • ½ tsp Worcestershire sauce
  • pinch dried parsley
  • 2 medium carrots (peeled and cut into 2-inch pieces)
  • 2 sticks celery (cut into 2-inch pieces)

Instructions

  1. Preheat the oven to 120C/250F and set an oven-safe rack on a baking tray.
  2. Cut each chicken wing at the joint and dry thoroughly using paper towels. Toss with baking powder, salt, and pepper in a large bowl.
  3. Arrange wings skin side up on the rack and bake for 30 minutes on the lower shelf.
  4. Increase temperature to 220C/425F and bake for an additional 45-50 minutes until golden brown and crispy.
  5. Meanwhile, prepare the Buffalo sauce by combining hot sauce, butter, vinegar, Worcestershire sauce, garlic, honey, and salt in a saucepan over medium heat.
  6. Toss wings in the Buffalo sauce after removing from the oven and serve with blue cheese sauce and vegetables.
