Ingredients
- 1 lb pasta (rotini, cavatappi, or farfalle)
- 16 oz fresh or frozen corn
- 1/4 cup red onion, finely diced

- 3/4 cup cotija cheese
- Dressing: lime juice, mayonnaise, sour cream/mexican crema, chili powder, cumin
Instructions
- Cook pasta in salted water until al dente; drain and cool.
- Grill or sauté corn until charred; let cool and remove kernels.
- In a bowl, whisk together lime juice, mayonnaise, sour cream, chili powder, cumin, salt, and pepper.
- In a large bowl, combine pasta with corn, red onion, jalapeno, cilantro, and cotija cheese. Pour dressing over and toss to coat.
- Chill for at least 30 minutes before serving.
