  • 16 oz fresh or frozen corn
  • 1/4 cup red onion, finely diced
  • 1 jalapeno, minced
  • 1/2 cup fresh cilantro, chopped
  • 3/4 cup cotija cheese
  • Dressing: lime juice, mayonnaise, sour cream/mexican crema, chili powder, cumin

Instructions

  1. Cook pasta in salted water until al dente; drain and cool.
  2. Grill or sauté corn until charred; let cool and remove kernels.
  3. In a bowl, whisk together lime juice, mayonnaise, sour cream, chili powder, cumin, salt, and pepper.
  4. In a large bowl, combine pasta with corn, red onion, jalapeno, cilantro, and cotija cheese. Pour dressing over and toss to coat.
  5. Chill for at least 30 minutes before serving.
