  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • Fresh basil

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
  3. Toss grape tomatoes and mozzarella with chopped basil; season with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper; sear them for 1-2 minutes on each side until golden brown.
  5. Add balsamic sauce to the skillet and bring to a simmer while scraping the brown bits from the pan.
