A cozy fall breakfast made with oats, pumpkin, warm spices, and a hint of maple.
Ingredients

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- 1 1/2 cups milk (any kind)
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- Optional: nuts, chocolate chips, dried fruit
Instructions
- Preheat oven to 350°F.
- In a bowl, whisk together pumpkin, eggs, milk, syrup, and vanilla.
- Stir in oats, spice, baking powder, and salt.
- Fold in optional add-ins.
- Pour into greased 8×8 pan.
- Bake 35–40 mins until set.
- Cool 10 minutes, slice, and serve.
