Description

A cozy fall breakfast made with oats, pumpkin, warm spices, and a hint of maple.


Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 1/2 cups milk (any kind)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Optional: nuts, chocolate chips, dried fruit

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, whisk together pumpkin, eggs, milk, syrup, and vanilla.
  3. Stir in oats, spice, baking powder, and salt.
  4. Fold in optional add-ins.
  5. Pour into greased 8×8 pan.
  6. Bake 35–40 mins until set.
  7. Cool 10 minutes, slice, and serve.
