Ingredients
- 6 oz cheddar cheese
- 6 oz Monterey jack cheese
- 6 oz gouda cheese
- 16 oz Velveeta cheese
- 2 cups grated Parmesan cheese
- 1 lb macaroni noodles
- 2 cups milk
- 1/2 stick butter (4 tbsp)
- 2 tsp kosher salt
- 1 tsp granulated garlic
- 1 tsp black pepper
- 1 tbsp BBQ rub
Instructions
- Preheat your smoker to 350-375°F using oak wood.
- Shred all cheeses and set aside.
- Boil 8 cups of water with kosher salt in a large pot; cook macaroni for 7-8 minutes until al dente. Drain and rinse under cold water.
- In another pot over medium heat, melt butter, Velveeta, shredded cheese mix (reserve some for topping), and milk until smooth.
- In an aluminum half pan, combine cooked noodles, grated Parmesan, garlic, pepper, remaining shredded cheese mix, and an additional cup of milk.
- Pour the cheese sauce over the noodle mixture; stir well to combine. Top with reserved cheese and sprinkle BBQ rub.
- Smoke in the preheated smoker for about 30 minutes or until bubbly and brown on top.
