  • 6 oz cheddar cheese
  • 6 oz Monterey jack cheese
  • 6 oz gouda cheese
  • 16 oz Velveeta cheese
  • 2 cups grated Parmesan cheese
  • 1 lb macaroni noodles
  • 2 cups milk
  • 1/2 stick butter (4 tbsp)
  • 2 tsp kosher salt
  • 1 tsp granulated garlic
  • 1 tsp black pepper
  • 1 tbsp BBQ rub

Instructions

  1. Preheat your smoker to 350-375°F using oak wood.
  2. Shred all cheeses and set aside.
  3. Boil 8 cups of water with kosher salt in a large pot; cook macaroni for 7-8 minutes until al dente. Drain and rinse under cold water.
  4. In another pot over medium heat, melt butter, Velveeta, shredded cheese mix (reserve some for topping), and milk until smooth.
  5. In an aluminum half pan, combine cooked noodles, grated Parmesan, garlic, pepper, remaining shredded cheese mix, and an additional cup of milk.
  6. Pour the cheese sauce over the noodle mixture; stir well to combine. Top with reserved cheese and sprinkle BBQ rub.
  7. Smoke in the preheated smoker for about 30 minutes or until bubbly and brown on top.
