  • 4 boiled eggs
  • 6 slices cooked bacon
  • 1 large avocado
  • 6 cups chopped romaine lettuce
  • 1 cup organic corn kernels
  • 1/2 cup crumbed cheese of choice
  • 1/3 cup plain Greek yogurt
  • 1/2 fresh lemon, juiced
  • 1 fresh garlic clove
  • 4 fresh chives
  • Sea salt and freshly ground pepper, to taste
  • 1 Tbsp avocado oil

Instructions

  1. Make the dressing by blending Greek yogurt, lemon juice, garlic, chives, sea salt, and pepper until smooth. Refrigerate.
  2. In a skillet, heat avocado oil over medium-high heat. Cook shrimp for about 4-5 minutes until pink and opaque. Season with salt and pepper.
  3. In a large bowl or platter, arrange shrimp, diced bacon, boiled eggs, avocado, corn kernels, cheese, and romaine lettuce.
  4. Drizzle with dressing before serving and toss gently to combine.
